The vinification procedure for Barolo Rüncot includes fermentation for 12-15 days in temperature-controlled stainless steel tanks, with daily pumping over.
After completing first alcoholic, then malolactic, fermentation in stainless steel tanks, the wine matures for 28-30 months in new barriques of French oak.
Bottling normally takes place in August. The wine then stays in the binning cellar for 18-24 months before release.
